In today's Chicago Sun-Times, ace food journalist Leah A. Zeldes meets all your bacon needs. She examines trendy bacon cookbooks, lists bacon-oriented blogs, offers bacon recipes, and compiles a glossary of baconspeak.

I tasted her Bacon Brittle. It was delicious.

Cover bacon strips thickly with a mixture of brown sugar and finely chopped pecans. Bake until the bacon is cooked and the sugar melted. Cool.

Well, cool!

However, that is *not* Pig Candy. I got Pig Candy from the Sweet Potato Queen's Book of Love (I believe; it's one of the Sweet Potato Queen book). They are high-lariously funny unless you're a prig, and full of really naughty good things to eat.

Bacon Brittle (goes off to retch...)
I used to love bacon until...
I had to eat Jowl bacon because we were too poor for the good stuff when I was young.
Then as a young adult I would cook 2-3 lbs. of bacon at a time for my ex. and he would consume it all in one sitting.
And now I'm a vegetarian and the idea just grosses me out...
But now that veggie bacon stuff is pretty good.

A lot of poormans cooking is way mo betta when bacon is in it. Um, it's close to hog killin time too. Makes me taste buds excited.

Best bacon is the old fashioned stuff in the smokehouse. Big slabs a few inches thick, cured, smoked and wrapped in cloth. It is hard enough to stop a bullet and has to be sawn, not cut, when you want a hunk for the kitchen. You usually don't fry it (too hard ot cut into thin strips) but chunk it into a pot of green beans for flavor.

And the smokehouse still smells great in August.
